When did your roastery start? And, as the owner, why a coffee roastery?

Crack coffee Roastery,  Raha Shahsavar, we starting in March 2019 and because we 

Love to brewing coffee , roasting , quality  be a professional and sharing experience with peoples  that’s the reason coffee Roastery . 

Question for roaster: How did you learn to roast coffee?  

I have been self studying about coffee and roasting, like reading books and googling, but Scott Rao is helping lost people in improving themselves, then I started roasting training at Dubai and improved my skills and techniques. Worked together to improve and understand.

And what drew you to roasting as a profession?

In 2017, I starting roasting training for a Probat machine in India , it was a great start and was motivation to me for the start of my career. 

What do you love most about the coffee roasting industry?

Professionally, I love meeting customers and farmers, because farmers are the first key of the coffee industry and I like discussions about processing, variety and agriculture. I love going to origin, living with them. 

In your opinion, is roasting more science or more art?

Personally roasting is both science and art, because you need science like convection, conduction and radiation, but there are some techniques to roasting where you need to an artist.

Was there a particular cup of coffee that changed the way you think about coffee?

There have been a few over the my coffee journey . I remember a cup of Colombia and Ethiopia, anaerobic new processing and new variety sidra. It just blew my mind 

What is your focus as a roastery? Wholesale to cafes? Do you roast just for your own cafe? Sell online? 

We focus on quality and creating best profile for whoever wants great coffee. 

May you please tell us a bit about your team? Who makes the wheels turn in your operation?

Everyone on the team plays in the success of the roastery and the quality of our coffee.

With all the different processing methods now available to roasters, is there a processing method that you enjoy working with? And why?

Yes , of course really enjoyed roasting different processing method because it gives me a lot of understanding and helps me to create much better profile according to origin. I think specialty coffee is all about quality and taste, new processing method is key to improving the industry . 

How have you seen coffee culture in your region grow over the last few years?

It’s grown massively! I am sure Dubai will be best specialty coffee roastery and cafe destination in the future, because Dubai people love specialty coffee and are trying to improve.
