How did you get into coffee roasting?
Short version - After a visit to Italy in 2000 I was exposed to Espresso and was caught first by the process, then the beverage and down the rabbit hole I went. First an Espresso Machine, then a Gene Cafe Home roaster, then a 1kg Toper roaster and a commercial espresso machine(in my dining room) then started my business and the rest is history!
What is your favourite coffee to roast currently?
I love coffees that challenges the roastmaster - some coffees just glide along on a beautiful curve and others need to be forced a little into a direction. Currently the Guatemala Carmona is one of my favourites.
If you had to drink one coffee for the rest of your life, what would it be? (Origin, varietal, processing, roast profile)
That would be a very boring life - The fun in coffee is exactly the opposite - drinking different coffees from different origins roasted differently. But the one coffee I never tire off is not a single origin but our Angel's Brew blend. It is a blend of a Natural Sidamo, Colombia and Brazil Santos. It is a match made in Heaven!
What has been your favourite moment in coffee?
The one moment that repeats itself all the time - everytime a customer take a sip of our coffee and you see that smile appearing that says "damn this is good"!
