We had the opportunity to catch up with Mr Winston Thomas, current South African barista Champion who will (finally!) be representing South Africa on the World Barista Championship stage after he won in 2020.
He has obviously had quite some time to prep, and he had made the most of it. He recently came back from the US where he spent time with no less than 3 US Barista Champions and a WCE Judge to test out his coffee and get insights into how the competition has evolved since he was last on stage in Amsterdam.
I think it's clear that Winston has matured as a coffee professional and business owner since his last crack at this competition and he is focusing on the important things.
We're already very proud of him and we can't wait to watch him.
