This is Julian's pride and joy, the 5kg fluid bed roaster.
Julian is so enthusiastic, you can see that the process never gets old for him. Even though he does it every day, every roast is exciting.
In go the green beans...
Up goes the temperature to 225 degrees celcius.
The beans jump pretty high so you've got to put a lid on it.
The hot air pushes up through the base of the barrel.
As the husks pull away from the beans they are sucked up the shaft.
The man and his machine, the process can be finicky but Julian has got it down.
After the first crack, the beans begin to turn cinnamon in colour.
Darker still...
And nine minutes later, the beans are bathed in a quick shower of water (a surprising amount of water actually!) to cool them down ready for the resting period.
