This is the 5th coffee in this Winter selection of the Discover Great Coffee Club box, and it is one of our favourites!
This classic Brazil Cerrado is a crowd favourite for a reason. Alicia Steyn (see a full feature on this amazing woman on pg 34 of the latest Coffee Magazine!) roasts this as a light medium roast. It is processed as a Pulped Natural and we get notes of Hazelnut, sometimes macadamia and roasted peanuts with cacao. Creamy with great body and wildly delicious with milk!
This is a special project coffee by Sorcery Coffee Roastery in Pretoria, and Walisho is the name given to an ancient heirloom varietal of coffee which is called after an indigenous tree in the Gedeo region of Ethiopia. The roast is medium and beautifully delicate, which teases out the most delicious flavours of the Brazilian grown bean.
We brewed this as a pourover using the April Brewer and we used 20g of coffee at a medium - coarse grind. The first pour was 60g of water and left to bloom for 1 minute. We then steeped with three more pours (the April filters are quite small!) until we reached 340g of water.
The result was a bright and clean, very sweet result and we are so happy we tried it this way!
