A meeting of minds, attention to detail and a celebration of anaerobic flavour make this collaboration between Minimalist Wines and Bluebird Coffee Roastery, a match made in heaven.

Tasting new coffees is one of the best parts of my job. I love being surprised and I love new flavour experiences. Tasting new wines is one of my favourite hobbies. It would be nice if I could somehow work that into the job description, right?! But as it stands, every time I see an interesting bottle (I am definitely attracted to a good label) or hear about a new star wine, I struggle to resist! So many flavour experiences, so little time!
As luck would have it, this collaboration meant that I could indulge flavour experiences from both beverages! Great success.
The idea is an exploration of anaerobic processing. And what a delicious exploration it has been. This is not your average wine, nor coffee.
The deep, 'spicy' and full-bodied reputation of the Syrah varietal is no where to be found in this elegant expression of processing. In this Blue Canary Syrah, I got notes of strawberry jam, which made me smile and just look at that juicy, jewel colour. Everything about it made we want to savour each sip. Carbonic maceration is a term millennial coffee geeks will recognise from Sasa Sestic's 2015 Championship run, he borrowed it from wine making and there was no going back!
The coffee is a delight. The bar is pretty high when it comes to these producers, La Palma & El Tucan. They are a world renowned coffee farm in Colombia. The experience did not disappoint. The processing and accompanying roast, from CMA Roastery of the Year 2025, created an extremely balanced cup of berries - gentle blueberry sweetness and gentle raspberry acidity. A treat.
