A fantastic place to learn about coffee. This is the entrance to the factory.
This just shows how big the factory is. They have strict rules on keeping the organic beans separate from the rest.

Lilla. This is only a very small section of this mammoth machine.
The computer that runs this enormous beast of a roaster has it's own glass house, it felt as though we were on the set of a James Bond film.
On the opposite end of the scale: This is the roaster that started Tribeca. The distinguished gentleman is still in the building and in working condition

This is a hardworking factory. Beans are constantly being roasted to order for their various clients.
Quality control. Once a bullet casing was once found in a bag of Colombian beans. The x-ray makes sure those don't land up in your coffee :)
If the x-ray finds any inconsistencies, the beans are hand sorted. Now that's dedication!
Apart from coffee, Tribeca has everything a cafe needs to get started.
