How did you get into coffee roasting?
I was a chef working in some top kitchens in SA and the UK and have been doing that since 2006,I have always loved coffee and working 17 hours a day you tend to drink a lot of it, being a chef you tend to focus on the flavour of anything you consume and the subtle differences in coffees became more and more apparent, so a few years ago I decided to take the plunge and start roasting coffee for my restaurant and maybe sell a bit on the side, when my wife was pregnant with our second daughter we decided to close our restaurant so we could spend time as a family that the restaurant industry does not afford you and so I started roasting full time as a business, love the process it allows me to satisfy my creative side much the same as cooking I mean it is after all just applying heat to an ingredient to modulate its flavour and make it more palatable ðŸ˜ÂÂÂÂ
What is your favourite coffee to roast currently?
I am currently really enjoying roasting our Ethiopia Yirgacheffe fully washed its such a bright clean coffee and responds really well to slight tweaks in the profile.
If you had to drink one coffee for the rest of your life, what would it be? (Origin, varietal, processing, roast profile)
Difficult question, probably an Ethiopia Refisa natural process on the roasted lighter side but man there are so many amazing coffees in the world I wouldn’t want to limit myself to only one!
What has been your favourite moment in coffee?
The learning process as a whole so not one moment but a daily joy.
